Serves 4
Rice cooked in milk, flavored with saffron and cardamom
  • 4 cups whole milk
  • ½ cup rice (washed and soaked in a cup of water)
  • 2 cup sugar
  • 3–5 saffron strands
  • 1 tsp small cardamom powder
  • 8–10 almonds (soaked, peeled and thin-sliced)
  • Bring the milk to a boil. Add the rice, sugar, saffron, and cardamom.
  • Pressure-cook for 3 whistles and turn off heat, letting the mixture remain in the cooker.
  • After about 20 minutes, open carefully and taste. Add more sugar if desired.
  • If the milk has not yet thickened, continue boiling until it does so. Cool and decorate with the almonds.
  • Serve chilled.
