Hakka Noodle - Speciality Dishes

  • 1 packet Vegetarian Noodles
  • 5 cups water
  • 1 medium sized capsicum cut thin 1 inch long strips
  • 1 medium carrot sliced thin 1 inch long strips
  • 1 medium onion sliced thin
  • ½ cup thinly sliced/shredded cabbage
  • 1 tsp finely chopped ginger
  • 1 red dried chili
  • 3 tbsp cooking oil
  • 1 tsp salt
  • 2 tsp chili garlic paste
  • 1 tsp red chili powder
  • 2 tbsp soya sauce
  • 2 tsp vinegar
  • 2 spring onions finely chopped
  • Heat water in a medium sized pan and bring to a boil, add in the packet of noodles, allow boiling for another 5 to 10 minutes. Drain and run under cold water and keep aside.
  • Heat oil in a wok (fry pan) add ginger, dried red chilies and sliced onions, stir fry  on high flame for  2 to 3 minutes, add in 1 tsp salt, 1 tsp red chili powder,  add in the cut vegetables and continue stirring. Mix in carefully the drained noodles.
  • Add the soya sauce, vinegar and chili garlic paste. Stir fry for 2 to 3 minutes on high flame, close burner.
  • Garnish with finely chopped spring onions and serve hot.
