Hakka Noodle - Speciality Dishes |

Ingredients |
- 1 packet Vegetarian Noodles
- 5 cups water
- 1 medium sized capsicum cut thin 1 inch long strips
- 1 medium carrot sliced thin 1 inch long strips
- 1 medium onion sliced thin
- ½ cup thinly sliced/shredded cabbage
- 1 tsp finely chopped ginger
- 1 red dried chili
- 3 tbsp cooking oil
- 1 tsp salt
- 2 tsp chili garlic paste
- 1 tsp red chili powder
- 2 tbsp soya sauce
- 2 tsp vinegar
- 2 spring onions finely chopped

Method |
- Heat water in a medium sized pan and bring to a boil, add in the packet of noodles, allow boiling for another 5 to 10 minutes. Drain and run under cold water and keep aside.
- Heat oil in a wok (fry pan) add ginger, dried red chilies and sliced onions, stir fry on high flame for 2 to 3 minutes, add in 1 tsp salt, 1 tsp red chili powder, add in the cut vegetables and continue stirring. Mix in carefully the drained noodles.
- Add the soya sauce, vinegar and chili garlic paste. Stir fry for 2 to 3 minutes on high flame, close burner.
- Garnish with finely chopped spring onions and serve hot.
