Mashed potato coated with spicy gram flour sauce and deep-fried to enjoy as a savory snack. |

Ingredients |
- 4 tbsp oil

- 1 small onion (finely chopped)
- ¼ tsp mustard seeds (rai seeds)
- 4–5 green chilies (finely chopped)
- 3–4 garlic cloves (garlic) (finely chopped)
- ¼ tsp turmeric (haldi) powder
- 2 lb potatoes (pressure-cooked, peeled, and mashed well)
- 2 tsp salt
- 2 tsp lemon juice
- 16 oz oil for frying

Method |
- Heat 4 tbsp oil in a wok. Add the onion, stir till onions get little translucent in color add in mustard seeds; allow mustard seeds to pop add green chilies, garlic, and turmeric. Stir for about 2 to 3 minutes.
- Add the mashed potatoes, salt, and lemon juice. Stir and turn off the heat. Allow the mixture to cool for about 20 minutes.
- Scoop out the potato mixture with a spoon, mix well, and form small balls. Dip the balls into the gram flour batter (besan paste) (recipe mentioned below for gram flour batter) and deep-fry all around on medium heat, allowing them to turn golden brown.

- 1 cup gram flour
- 1 tsp salt
- ¼ cup water
- ¼ tsp turmeric (haldi) powder
|
Method |
- Mix the above-mentioned ingredients in a bowl to make a smooth, yet thick, gram flour batter. Dip the potato balls into this paste.
- Enjoy hot vada .
