Batata Vada - Appetizers (Veg)

Mashed potato coated with spicy gram flour sauce and deep-fried to enjoy as a savory snack.
 
Ingredients
  • 4 tbsp oil
  • 1 small onion (finely chopped)
  • ¼ tsp mustard seeds (rai seeds)
  • 4–5 green chilies (finely chopped)
  • 3–4 garlic cloves (garlic) (finely chopped)
  • ¼ tsp turmeric (haldi) powder
  • 2 lb potatoes (pressure-cooked, peeled, and mashed well)
  • 2 tsp salt
  • 2 tsp lemon juice
  • 16 oz oil for frying
Method
  • Heat 4 tbsp oil in a wok. Add the onion, stir till onions get little translucent in color add in mustard seeds; allow mustard seeds to pop add green chilies, garlic, and turmeric. Stir for about 2 to 3 minutes.
  • Add the mashed potatoes, salt, and lemon juice. Stir and turn off the heat. Allow the mixture to cool for about 20 minutes.
  • Scoop out the potato mixture with a spoon, mix well, and form small balls. Dip the balls into the gram flour batter (besan paste) (recipe mentioned below for gram flour batter) and deep-fry all around on medium heat, allowing them to turn golden brown.

 

 

For (Gram Flour) batter
 
Ingredients
  • 1 cup gram flour
  • 1 tsp salt
  • ¼ cup water
  • ¼ tsp turmeric (haldi) powder
Method
  • Mix the above-mentioned ingredients in a bowl to make a smooth, yet thick, gram flour batter. Dip the potato balls into this paste.
  • Enjoy hot vada .
