Baked Paneer - Entrees (Veg)

Cottage cheese cubes baked with vegetables and cheese
 
Ingredients
  • 3 medium-sized onions (sliced)
  • 2 green chilies (finely chopped)
  • 3–4 peppercorns
  • 2-inch piece ginger (grated)
  • 1 small cinnamon stick
  • 4 tbsp cooking oil
  • 1½ tsp salt
  • 1 ¼ Red chili powder (as per taste)
  • 2 large tomatoes (pureed)
  • 2 tsp garam masala (blend of Indian spices)
  • 2 tsp tomato ketchup
  • 1 tsp sugar
  • ½ cup water
  • 1¾ lb cottage cheese (paneer)
  • 1¾ lb grated cheese
  • 1 bell pepper (capsicum) (sliced in thin rings)
  • 2 bay leaves (tej patta)
  • ½ tsp turmeric (haldi) powder
Method
  • In a food processor, grind sliced onions, green chilies, peppercorns, ginger, and cinnamon. Heat the oil in a deep sauce pan. Add the onion paste and cook until the onions turn golden in color.
  • Add the salt, red chili powder, turmeric, 2 bay leaves, garam masala (Indian spice powder), ketchup, and sugar.
  • Add the water and boil for another 10 minutes. Cover with a lid. Keep gravy aside.
  • Cut the cottage cheese into 1 inch pieces and arrange in a baking dish. Pour the hot gravy sauce over the pieces. Add grated cheese on top and garnish with sliced capsicum rings.
  • Bake at 375F for about 30–35 minutes.
  • Serve hot with naan or rice.
